Baked Herb Crusted Stuffed Pork Chops

Here's another one of my throw-something-together-quickly dinners that turned out amazing. I meant to blog this last week, but it was way too busy getting ready for C's birthday party this last Saturday (more on that later!).

Olive Oil
Panko & Italian Herb Bread Crumbs
Shredded Cheese
Cream Cheese & Broccoli mixture
Thick Porkchops

Cut a pocket through the middle of the chop and stuff with cream cheese & broccoli mixture.

Brush chops with Olive Oil and dip in bread crumb mixture coating generously. Spray baking sheet, preheat oven to 350*, and bake until cooked through (45 minutes or so for me).
